Ingredients
  

  • 2 Medium potatoes diced
  • 1 Cup cabbage chopped
  • 2 Carrots, sliced
  • 1/2 Orange bell pepper, diced
  • 1/2 Yellow bell pepper, diced
  • 1 Onion, chopped
  • 1 tbsp Coconut oil
  • 1 tbsp Chopped parsley
  • 2 Cups of water
  • Salt and pepper to taste

Instructions
 

  • Sauté the Onion:
    In a large pot, heat coconut oil over medium heat. Add the chopped onion and sauté until translucent.
  • Add Vegetables:
    Stir in the carrots, bell peppers, cabbage, and potatoes. Cook for 3-5 minutes, stirring occasionally.
  • Add Water and Simmer:
    Pour in 2 cups of water and bring the soup to a boil. Reduce heat and let it simmer for 20-25 minutes, or until the vegetables are tender.
  • Season and Garnish:
    Add salt and pepper to taste. Stir in chopped parsley and let the soup rest for a few minutes before serving.
  • Serve and Enjoy:
    Ladle the soup into bowls and enjoy a warm, nutritious meal
